Ballotine de pollo relleno de champiñones/Chicken ballotine with mushrooms

El reto del mes de abril de Daring Cooks era deshuesar un pollo, rellenarlo y asarlo, para crear una ballotine de pollo. Cuando leí el reto pensé que sería incapaz de hacerlo pero con la ayuda del vídeo de Jacques Pepin ha sido casi fácil!

For the April Daring Cooks Challenge, Lisa from Parsley, Sage and Sweet has challenged us to debone a whole chicken, using this video by Jacques Pepin as our guide; then stuff it, tie it and roast it, to create a Chicken Ballotine.


Ingredientes / Ingredients:

- Un pollo entero/1 chicken 
- 500 gr champiñones/mushrooms 
- 1 tomate/tomato 
- 80 gr bacon en taquitos/lardons 
- 2 dientes de ajo/garlic cloves 
- 2 rebanadas de pan de molde/slices of bread 
- 2 puñados de cebolla picada/handfuls diced onions 
- 2 cucharadas de queso de huntar/tablespoons cream cheese 
- Perejil, sal, tomillo y pimienta blanca/ Parsley, salt, thyme and white pepper

Empezamos con el relleno. En una sartén con un poco de aceite ponemos los champiñones troceados, con el bacon, el tomate troceado, la cebolla y el ajo troceado. Sofreímos y aderezamos con perejil, sal, tomillo y pimienta. Una vez listo añadimos el pan que habremos rallado y el queso y mezclamos para que nos quede una masa compacta. 

We start with the stuffing. Pan fry the sliced mushrooms, lardons, diced tomato, onios and diced garlic. Season with salt, parsley, thyme and white pepper. Put it in a bowl and add cream cheese and breadcrumbs from the bread slices until we have a compact stuffing.
Y ahora al lío. Para deshuesar el pollo necesitamos paciencia, seguir el vídeo al píe de la letra, un cuchillo de chef y uno mas pequeño bien afilados y un trapo de cocina para agarrar bien el pollo. Dejo el vídeo porque mejor que Jacques no lo voy a explicar yo. Está en inglés pero solo con ver como lo hace se entiende. 

To debone the chicken we need one chef' knife and a pairing knife, a kitchen towel, the video and patience. Here are some photos of my deboning process.
Salpimentamos el pollo y lo rellenamos, sin olvidarnos de las patas que también hemos deshuesado y lo atamos preparado para el horno. Con el horno a 200 grados embadurnamos el pollo con aceite y horneamos unos 45-60 minutos, dependiendo del tamaño del pollo.

Season the chicken with salt and pepper and stuff it. Make a parcel as shown in the video and roast for 45-60 minutes, depending on the size of the chicken.
Acompañamos el pollo de unas patatas asadas y ensalada y a disfrutar!  

Serve the chicken with roast potatoes and a lettuce salad. Enjoy!

    1. Thanks Audax, I had to bribe my photographer with wine and cheese to help me with playing the video and process photos, but was totally worth it.
